Barracuda cooking January 2026

This is the Seared Scallops dish my restaurant(The one I work for, to clarify) is known for. 4 medium-sized scallops with sweet brown butter carrot pureé on the bottom, topped with chimmicurri sauce and ocean mix cilantro. The carrots are roasted with salt, pepper and chinese 5-spice seasoning.
